It's A Boy!! Baby Shower Cupcakes

A good friend of mine is due any minute now with boy # 2 and her best friend decided last week that she needed a baby shower. We were all surprised to see her still pregnant at the shower. We were convinced she wasn't going to make it. So I told her that I would make her some labor inducing cupcakes. One can hope. She looks ready to pop. ha ha

I just made her some simple chocolate cupcakes with vanilla swiss meringue buttercream frosting. She isn't a huge fan of frosting and she told me I changed her mine once I introduced her to meringue based frostings. 

Since I haven't had much time lately to bake or blog ( I have a few things I need to blog and I will as soon as I get the time) I figured I would start off the new year with cupcakes dedicated to a soon to be here baby boy. I didn't take my usual step by step pictures because these are recipes I have made before and blogged about. The chocolate cupcakes are my best ever chocolate cupcake recipe found HERE and the frosting is the swiss meringue buttercream that I used on the Yo Gabba Gabba cupcakes found HERE. In fact the friend that is due any second is the mom of the kiddo that I made the Yo Gabba Gabba cupcakes for. He is excited to be a big brother soon.

Just the simple chocolate cupcake with the frosting dyed blue with a few drops of the Americolor electric blue and 1M swirls.

I added some green fondant discs and light blue, royal blue and green stars. 


I used an Ateco circle cutter 2.5 inches in diameter - it was a perfect fit





I used a little bit of vodka to "glue" the letters and the stars to the discs - it was a touch shiny and it usually dries but I had let my fondant dry completely before gluing the letters on and I probably should have glued them right away. Still my friend loved them and if they have magical labor inducing powers I just might be getting a text tonight saying she is on her way to have her baby boy!! Fingers crossed!!
